| We read with interest the paper entitled with “Microencapsulation
of probiotic Saccharomyces cerevisiae var. boulardii with different wall
materials by spray drying” by Sultan Arslan, Erbas, Tontul, and Topuz
(2015) (Arslan et al., 2015) in the journal of LWT -Food Science and
Technology, 63, 685–690. The authors are to be congratulated for their
valuable work on the encapsulation of probiotic yeast with different
wall materials. However, in the third paragraph of part 3.4. survivability
rate in simulated gastric solution, in results and discussion section,
they have written that “Lian, Hsiao, and Chou (2003) spray dried
B. longum B6 using gum Arabic, gelatin, whey and soluble starch” while
in the article that is written by Lian et al. (2003), “viability of microencapsulated
bifidobacteria in simulated gastric juice and bile solution”
is mentioned in the third line of abstract that they microencapsulated B.
longum B6 by gum Arabic, gelatin, soluble starch and skim milk (Lian
et al., 2003). They did not use whey as wall material unlike what is
mentioned in the article is written by Sultan Arslan et al. (2015). |
